Cake-y Brownies Ingredients: 2 cups sugar, 1 cup butter, 1/2 cup cocoa powder, 1 tsp vanilla, 4 eggs, 1 1/2 cup flour, 1/2 tsp baking powder, 1/2 tsp salt, 1/2 cup chocolate chips Preheat oven to 350 degrees F 1. In a large bowl, combine all the ingredients except the chocolate chips with an electric mixer 2. Fold in the chocolate chips 3. Pour into a sprayed pan, or into muffin tins and bake for 20-25 minutes
Fudgey Brownies Ingredients: 1 cup granulated sugar, 1 cup brown sugar (lightly packed), 3 eggs, 3/4 cup cocoa powder, 1 cup flour, 1 tsp salt, 1.5 cup dark chocolate chips, 1 cup melted butter (unsalted), 1 tsp vanilla, (optional: 1 tsp coffee) Preheat oven to 350 degrees F 1. In a large bowl, combine the butter, eggs, and extracts. Whisk well. 2. Add in the sugars and mix. 3. Sift in the coca powder, flour, and salt. Use a whisk until it starts to combine. Then switch to a rubber spatula. 4. Add in the chocolate chips and continue using the rubber spatula to fold until it is just combined. Careful not to overmix! 5. Line an 8x8 pan or 8x13 pan with parchment paper, depending on how thick you want your brownies to be. Then pour in the mix and spread it to the sides. 6. For the 8x8 pan, bake for 35-45 minutes. For the 8x13 pan, bake for slightly less. It's ready when the center is just set and doesn't move when jiggled. The top should have a few cracks too. The brownie will continue baking in the pan even when out of the oven, so don't worry if they seem extra gooey. *The toothpick test won't work here. It shouldn't come out clean!*
